Cornbread Recipe

I grew up eating cornbread with most of our suppers. It's a very cheap, filling and fast bread to cook with a meal. I love the crispy crust. And did you know cold cornbread is good with milk? I am not a milk drinker at all, but if you break up cold cornbread into pieces into a glass and pour milk over it, I'll eat it with a spoon. I think that is a southern thing!


This recipe has no sugar in it! I grew up eating unsweetened cornbread and unsweetened tea. Occasionally I crave sweet cornbread, but never sweet tea. *gag* I think this recipe should turn out ok if you had a tablespoon of sugar. It will make it turn more brown on top and should make a crispy top. This recipe without the sugar doesn't make a crispy top.


I usually make it in my 6 inch cast iron skillet


If you don't have a cast iron skillet the next best thing is a granite ware baking pan. I picked up mine in May at the War Eagle Mill. I have wanted one for years and finally got one!
Biscuits and dressing are wonderful baked in this as well. Something about this pan makes everything have a really crispy crust.

This is my grandma's cornbread recipe!


Cornbread Recipe
3/4 cup cornmeal (either white or yellow is fine. I go back and forth between the both all the time)
1/4 cup flour (you can use whole wheat flour to make it healthier and it turns out just fine)
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 cup buttermilk
About 4 tablespoons of oil (I always use canola)

Preheat oven to 450. Before mixing cornbread put all oil in baking pan and put in oven while oven is preheating.

Sift flour, baking powder, soda and salt in a small bowl and set aside. (There is nothing worse than having a "soda ball" in your cornbread when you're eating it, ick) In another bowl add cornmeal, egg and buttermilk and whisk together until mixed. Add flour mixture and whisk until mixed.

Next take out your pan from the oven. Be very careful!! Oil gets extremely hot fast. I have to get a potholder and wear a thick hot mitten to keep my hand from burning just for those few seconds of holding the pan! Pour about half of the hot oil in your cornbread mixture and whisk in quickly. It will sizzle loud! As soon as you mix it together pour cornbread mixture into the pan and put back in the oven. Cook for about 10 to 15 minutes. You want it to have a nice golden brown top but don't want it to burn on the sides.


If you bake this in the 6 inch skillet it will make 4 large pieces of cornbread, or 6 generous size pieces. If you make this recipe in the pan it will be thinner (since it is a larger pan). This recipe doubles excellent!

Some tips on making the cornbread:
I don't measure out my oil!! The more oil you have to coat the bottom of your pan the crispier your crust will be on your cornbread. I just eye it.
This cornbread is not salty so it's great when you add salted butter to it when it's hot. yumm!

Bella Materna Review and Giveaway

My frustration of finding a nursing bra that fits!

After nursing 13 months I have become really frustrated with the fit (or rather, the lack of fit) and style of nursing bras. I've tried several brands and have not been happy with any of them. They're either too tight, too loose, the cups warp (even after hand washing them!), the wires dig into my arm pits, etc, etc...I have heard many women with the same frustrations finding a good nursing bra and end up using a regular bra. So just recently I threw up my hands and did the same. Do you know what a pain it is to try to nurse out of a regular bra?? It is just as bad as having a nursing bra that doesn't fit well!

Then I started researching various brands of nursing bras online and came across Bella Materna. The construction of Bella Materna bras appeared to be better than what I have seen in other bras.

Are you sure you are wearing the right bra size??

The customer service at Bella Materna was very helpful in educating me about the difference between band and cup sizes and how to pick out the correct size. Let me share!

  • Buy your nursing bra either in the last trimester or early on after the baby is born.
  • Buy a nursing bra with the same band you wore pre-pregnancy and 2 cups larger.
  • If the bra band seems a little tight, buy an extender. Your rib cage expands when you are pregnant. If you buy a bra solely on how it fits when you are pregnant it will end up not fitting well weeks or months later.
  • Having the correct band size especially if you are a D cup or larger is very important. 
  • It is also important to understand how cups ladder in sizing.
    • The cup on a 38D is basically the same cup on a 36E and the cup on a 34F is the same cup as the 32G, etc.
I know I have made mistakes of buying the wrong bra size both with regular bras and nursing bras! After reading this, do you think you have as well??

My Bella Materna nursing bra experience!
I was extremely excited when Bella Materna offered their Seamless Cup Bra for my review. This is the most amazing bra I have ever worn and that includes regular bras too, not just the nursing bras! I am so impressed with the quality and construction of this bra. The imported Italian nylon/lycra is incredibly soft and smooth, nothing like I have felt before. There is a perfect amount of 'give' in the material so it makes it feel like you are wearing a bra that is customly molded to you. Also, something I always have trouble with, is the bra straps constantly sliding down my shoulders. This has not happened once with my Seamless Cup Bra! When I was ready to nurse, the clasps were very easy to undo with one hand. The underwires are made from Bella Materna's patented "Flexy Wires" which are not as hard as typical bra underwires. It did not dig into my ribs or my arm pits. I'm convinced that women who do not like underwire bras will love the Bella Materna underwire bras because of this feature. I really wish that I would have tried Bella Materna bras from the start. I have wasted so much money on other nursing bras that I could have easily bought 2 Bella Materna nursing bras!

Pros
  • Soft and smooth imported Italian nylon/lycra that is breathable and quick-drying.
  • Bra straps stayed put on the shoulders!
  • Nursing clasps were easy to undo with one hand
  • Underwires did not dig into my ribs or arm pits and felt like they molded to my body.
  • Easier to pumps hands free with this bra than other nursing bras.
Cons
  • Costs slightly more than a typical nursing bra you will find at a retail store BUT the Pros definitely outweigh this factor. Like I mentioned before, I have wasted so much money on bras that DON'T fit.

Half Marathon Mama-Week #4




Ok, ok, so I've missed posting a couple of weeks. That is because I've missed my long runs :-( NOT GOOD! But I'm still keeping up....I just ran 5 miles today. Whew! I think I better get to bed before midnight the night before my runs! Overall my time wasn't too bad considering how tired I was. Ethan slept the whole time in the Jeep jogging stroller too. Weather wasn't too warm and there was a little breeze.

I have planned to run a 5k next Saturday...if my friend has kept up with her training and is still going to do it with me. Otherwise I'll just do a 6 mile run that day.

Sad Day!

I mentioned last week our Desk Top became gravely ill and had to go see the doctor. The doctor was able to save all the parts except the HARD DRIVE. Yes, it was quite the procedure. Now, Desk Top does not have any previous memories of ANYTHING....including the first year of Ethan's life.

Now 90% of our photos and videos are gone FOREVER as I never backed up my photos. A few were saved because I had digi-scraped and had them loaded on an online album to share. Our extended family are not picture-people, so all the pictures we have, we took ourselves. I am very mad at myself, but there is nothing that I can do about that now.

So, moms, you will be getting a "nagging message" from me about once a month tell you to BACK UP YOUR PICS!! Just in case you forget to as well. I wouldn't want any mom to loose precious pictures of their children!

Wordless Wednesday- Ethan & the Wipes

I was in the kitchen(the next room over) cleaning and Ethan was in the living room watching cartoons. I thought I was hearing something strange. When I look in the living room this is what I saw.  I quickly grabbed the camera before he noticed me. He took out almost all of the disposable wipes out of the container and they were all over the place! The wet spot is because of the wipes LOL


When Ethan saw me he started laughing. I couldn't help but laugh too it was too cute :-D

Belle's Biscuits Review & Giveaway

Ethan had the opportunity to try Belle's Biscuits this week. We were excited because it has been a rough last two weeks at our house with teething. If you are a mom, you know what I mean! We absolutely fell in love with Belle's Biscuits.

Belle's Biscuits were developed by a Pharmacist and his wife to help their toddler cope with teething as nothing they tried had worked. Their biscuits are organic and also are dairy, soy and wheat free.There are three flavors, Original Vanilla, Maine Maple Spice and Wild Maine Blueberry.


We were sent a box of the Original Vanilla and Wild Maine Blueberry biscuits. Ethan went crazy over both flavors and I enjoyed the smell while he ate them :-) I love the heart shape and it is the perfect size for little hands. The quality of Belle's Biscuits far exceed other brands of teething biscuits we have tried. We have had trouble with other brands of teething biscuits falling apart because they were too soft and were also really messy. Belle's Biscuits are much harder and didn't cause much of a mess! I froze one of Ethan's biscuits and he really loved that! I highly recommend giving them to your baby frozen. In fact, Ethan didn't finish his biscuit one night and I put it in the fridge to hardened it back up until he was ready to finish it. Belle's Biscuits really helped Ethan get past his cranky teething spells during the day!
